Healthy Recipe: Southwest Style Steak Tacos

Seriously… Who doesn’t love tacos? And did you know they can be good for your diet, too? It’s all in the toppings and selections. Check out these delicious and nutritious southwest style steak tacos you can make at home! 

Servings: 2 tacos
Prep and cook time: 30-40 minutes

Ingredients

  • 2 Flour tortillas
  • 5 oz Top sirloin steak 
  • 1/4 C Shredded red cabbage
  • 1/4 C Shredded green cabbage
  • 1/8 C Chopped cilantro as garnish 

Rub

  • 1/4  tsp Chili powder
  • 1/4 clove of Garlic – minced and sautéed
  • 1/16 tsp Ground cinnamon
  • 1/16 tsp Salt
  • Pinch Cayenne pepper

Avocado-Lime Salsa

  • 1/4 C Diced tomatoes
  • 1/2 tsp Diced red onion 
  • 1 Tbsp Lime juice
  • 1/16 C Chopped cilantro 
  • 1/3 of a Ripe diced avocado
  • Pinch of Salt

Directions

Mix together garlic, chili powder, cinnamon, salt and cayenne pepper. Rub mixture onto both sides of steak. Grill steak to a medium rare, remove from grill and let rest for 10 min. 

Toss tomato, onion, avocado and cilantro in a bowl. Add lime juice and a pinch of salt.

Warm tortillas on the grill. 

Assemble the tacos by placing steak cut in strips on the warm tortillas. Add cabbage and avocado-lime salsa. Top with cilantro and serve.
