Strategies For Keeping Your Veggies Edibly Fresh

New research for the University of Nebraska-Lincoln conducted by Methodist dietitian Martha Nepper, MS, RDN, LMNT, CDE, and UNL researcher Weiwen Chai shows you might want to explore other areas at the grocery store first.

In a focus-group study aimed at curbing childhood obesity, researchers found that parents may be reluctant to buy fresh fruits and vegetables, because they may cost more, require too much prep work and may spoil before eaten. Parents were also reluctant to buy fruits and vegetables in bags, cans or jars because they believed those foods are not as beneficial for their children as fresh fruits and vegetables.
